The yellow croaker (Shiroguchi, Large Yellow Croaker) is a white-fleshed fish of the croaker family (Sciaenidae) found mainly along the Chinese coast. Although relatively unknown in Japan, it is distributed in the market as an imported fish. Its flesh is moderately thick, low in fat, and has a refined sweetness despite its light flavor, with a soft yet elastic texture. For sashimi, it is often served as thin slices or prepared with kombu curing to enhance its umami. While it is regarded as a high-class fish in China and Korea, in Japan it is more commonly used in cooked dishes such as grilled fish, simmered dishes, or deep-fried preparations. In recent years, however, some Japanese restaurants and creative cuisines have begun to use it as sashimi or sushi toppings.
